Homemade Energy Bars Part II

Camila made the same recipe that we did last weekend, but she used two eggs instead of one. And she added slightly different goodies. Because she’s awesome, she brought a couple to morning spin for me and Eileen to try. So much better!  I think we’re on to something…

Camila’s Cohesive Oat Bars

Ingredients:

  • 1 cup quick-cooking rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 beaten egg
  • 1/4 cup applesauce
  • 1/4 cup honey
  • 2 tablespoons vegetable oil
  • 1/4 cup unsalted sunflower seeds
  • 1/4 cup crushed cashews
  • 1/4 cup dried cranberries
  • 1 cup chocolate chips

Directions:

Combine dry ingredients (first 3), then mix in wet ingredients (eggs to oil).  Lastly, add nuts, fruits & chocolate. Spread out in foil-lined pan. Bake at 325 for 15 minutes.
