Homemade Energy Bars Part III

I don’t know if I’m going to keep adding roman numerals to the end of these energy bar posts, but for now it seems like the most sensible thing to do.

I tried a new genre of recipe today, and it was ridiculously simple. The base is just honey & peanut butter, then you mix in seeds & carob powder (kind of like cocoa powder).  AND, everything is in equal parts! I halved the recipe posted below just in case they were gross.  But they are NOT.  They seem hardier than the previous oat-y recipes.  Still a little crumbly at room temp, but if refrigerated, they would hold together really well.  And they taste like chocolate peanut butter goodness.  Mmmmm.

Ingredients:

1 cup honey

1 cup peanut butter

1 cup carob powder

1 cup sesame seeds

1 cup pumpkin seeds

Directions:

Heat honey in a saucepan, then add peanut butter and stir to mix.  Add the rest of the ingredients (either with heat off or over very low heat) and mix till combined.  Press into heat-proof pan (8x8 works well), and chill for at least 1 hr.  Store in refridgerator.
